Eating Free reveals why the prevailing wisdom on weight loss--low-calorie, no carbs, high-intensity exercise--sharply clashes with the facts of human biology and human nature, setting dieters up for failure, again and again. He offers a welcome alternative: a scientifically sound, sensible, effective, and truly pleasurable way of eating.

Why Eating Free isn't just another diet book:

Eating Free sheds light on a little-known hormone, ghrelin, which controls our hunger (the need to eat), drives our appetite (the desire to eat), and works to manage our metabolism and ability to burn fat only when it is fed, regularly and well. To keep ghrelin and its power to provoke cravings in check, Manuel Villacorta advocates eating--beginning with breakfast, within an hour after waking, and then every three to four hours;

Eating Free also calls attention to the role of sleep in weight loss. Based on studies, ghrelin (and appetite) increases when sleep is reduced to four or five hours a night, from the ideal six to eight hours;

Eating Free urges dieters to welcome back carbs, a macronutrient needed to control ghrelin spikes. The average brain needs 130 grams of carbs per day to function optimally;

The Eating Free program achieves steady, sustainable weight loss--with an 84 percent success rate among Villacorta's clients. (Other diets, on average, have an 85 percent failure rate!).

Eating Free presents a "newtrition" combination for optimal fuel and quality weight loss: 45 percent carbs, 30 percent protein, and 25 percent fats;

Eating Free refutes the focus on grueling, daily exercise for weight loss. Research shows that losing weight is 80 percent nutrition and lifestyle. Plus, rigorous workouts cause ghrelin to spike, particularly in women;

Eating Free demonstrates that weight loss is about a whole balance of factors, including our stress levels. Cortisol production, due to everyday stress, can be a huge barrier for weight loss. Stress is toxic to our well-being, so self-care isn't just a nice idea; it's essential to effective weight loss;

Manuel Villacorta is on a mission to get Americans eating with elegance. Villacorta encourages everyone to eat the way his family dined in his native Peru--taking the time to savor all kinds of food, in moderate portions, and share the joy of eating with family and friends

From the Author:
In 2004, I founded MV Nutrition, my private practice, in San Francisco, and since then I am proud to say that we've helped over 2,000 Bay Area residents with their health goals and received four awards 2008, 2009, 2010, and 2012 as "Best Nutritionist" in San Francisco. After four years of reading the research literature, applying it in my private practice, seeing thousands of people and witnessing great success, I had a vision. It became clear to me that I have something to share with the rest of the nation. This is when the Eating Free philosophy and weight management program was born.

I created Eating Free because of my love for food! And through my years of experience, I have witnessed suffering, deprivation and the demonization of food in order to lose weight. I hope to put an end to that with Eating Free by spreading the word nationwide.I want readers to love and celebrate real food while reaching their health goals.

I have a personal passion for eating as a way to strengthen bonds and enhance the quality of life (a custom I adopted from my native Peru), I offer something more than another diet, fad, or trend. As I attest, Eating Free is a lifestyle--a nourishing and satisfying, as well as sensible and effective, way of eating, every day.
From the Back Cover:

Lose Weight and Look Great Without Gimmicks or Guilt

If you're tired of yo-yo dieting, subsisting on salads with little to show for it, or if you can't lose weight regardless of extra workouts, Eating Free can give you back the foods and the life you love--while getting you the body you want. More than two thousand people have transformed themselves with the Eating Free program, and now you can, too.
Developed by nationally recognized, award-winning dietitian Manuel Villacorta, Eating Free reveals that what most of us do in earnest to lose weight--work out harder and eat less carbs--actually sets up a vicious cycle for us to gain weight. Eating Free explains why one important hormone, ghrelin, is the true key for long-term weight loss. With Eating Free, you'll learn how to make ghrelin work for you, so your metabolism is revved and your cravings are controlled. You'll also discover why what you think you know about weight loss may be keeping your scale stuck. For example:

"I've got to exercise to lose weight." In order to exercise weight off, you need to work out 1 to 2 hours a day, 6 to 7 days a week, which is unrealistic for most people. Eating Free gives you permission to lighten up while slimming down, with a weight-loss solution is 80% nutrition and 20% exercise.

"I need to cut out carbs." Ghrelin is the key to weight loss success, not carbs. The Eating Free formula (45% carbs, 30% protein, 25% healthy fats) controls cravings by keeping ghrelin in check and allows you to enjoy a wide variety of "forbidden" foods like pasta, potatoes, rice, and chocolate while still losing weight.

"I need to weigh myself every day." Instead of obsessing over the scale every morning, you'll achieve success by stacking a wide variety of factors in your favor on a weekly basis--things like your levels of sleep and stress. By giving your body what it needs week-by-week, you can afford one or two "slip-ups" and still lose weight.
